Healthy Protein Pancakes

Happy flippin Sunday! (Get it, flipping pancakes :P) Anyways first off, I love pancakes (but who doesn’t right?) Pancakes make everything better and it doesn't matter when you eat them! Eat them for breakfast, lunch or have a breakfast dinner! Any time of the day pancakes are delicious! I love eating mine with lots of cool whip and fruit on top. What about you? Whats your favorite pancake topping?

And second off.. Happy March! I can’t believe it’s already March. I felt like January lasted 18 years and February flew by. And now it’s March and we are still freezing our butts off! This winter has also lasted 18 years.  I’m praying very hard that we get an early spring because this cold cold weather is sure draining me. This whole weekend there has been a cold weather warning on and Alberta actually broke a world record for the coldest night since 1960! Crazy huh?. I wish that cold weather/snow days applied for work to! Why can’t we just shut down the whole town and everyone just stay in their warm houses and eat pancakes and cookies in bed! That would be the dream eh!

So I hope this blog post warms your heart a bit on this cold day today!Trust me this recipe is worth waking up for and getting out of bed! I’m so excited to be sharing this recipe with you guys! Dont get me wrong I love a good buttermilk pancake from IHOP every once in a while but they arent quite "healthy" as you could say. This recipe is so yummy, full of flavour and nutritious! Even my husband loves them. Whenever I make them he always says, "man these are good" and eats them as fast as I am cooking them!

I also want to mention that you CANNOT taste the protein powder in them. And I think that's what makes them taste so good. Some recipes I've made I've noticed that particular protein taste but these you cannot. So that makes for a win win!

I enjoy eating these for breakfast most of the time. It makes for a quick and filling breakfast, which is nice for days when you don't feel like making breakfast or for days you're short on time, This recipe makes about 8-10 big pancakes. So if you want to feed a few more I would double the recipe. Sometimes I will double the recipe and then just put the extras in a ziplock bag in the fridge and then just pop them in the toaster the next day. Kinda like a eggo, but way healthier! I've also made these in the waffle maker and they work great in there to! Because we all know waffles are just pancakes with abs! :P

Protein Waffle Recipe

1 1/2 Cups Whole Wheat Flour

3 TSP. Baking Powder

1 scoop Vanilla Protein Powder

1 TSP. Cinnamon

Small Dash of nutmeg and cloves

2 Eggs

1/2 Cup. Coconut oil (melted)

1 1/4 cup. Almond Milk

2 Tsp. Honey (liquid or creamed works)

1. Combine flour, baking powder, protein powder, cinnamon, nutmeg and cloves in large bowl. Stir.

2. Add eggs, melted coconut oil, milk and honey. Stir all together

It is going to be quite a thick pancake constistency. Thats ok. If you need to add a tiny bit more milk then you can. But it is supposed to be super thick and heavy. 

Heat pan to medium heat. Pour small amount of batter into pan. (I just use a 1/4 measuring cup to scoop my batter and I have to spread the batter around into a thin circle because its so thick it will just stay in a big blob.) I dont even use any butter or pam to spray the pan with because of the coconut oil already in the batter.

This is the pancake syrup I use. I purchased it from Reflex Supplements. It may be available at other supplement stores I'm not too sure. But this is a totally guilt-free syrup. The nutritional facts are unbelievable. There is 0 calories, sugar, carbs. 0 everything. But I will be honest, it doesn't have that much flavour and took me a few times to get used to it. That is why I add spices and honey to my pancake mix for that added flavor. I have also tried another low calorie syrup from Walmart that I will link here for you. It's called E.D Smith No sugar added Pancake Syrup. The nutritional facts are still pretty good. Only 7g of sugar, so better than your aunt Jemima. Even though, we all love our Aunt Jemima! Also, adding light cool whip and fruit adds more flavor which helps out ALOT!
